If you’re looking for something more hearty, try making a soup or chili. These are great options for meal prep as well, so you can have leftovers for the week. A simple black bean chili can be made by sautéing onion and garlic in a pot, adding in canned black beans, diced tomatoes, and chili powder, and letting it simmer for about 20-30 minutes.

Quesadilla

One of my personal favorite meals to make for one is a quesadilla. All you need is a tortilla, cheese, and any additional toppings you like, such as diced tomatoes or avocado. Simply heat up the tortilla in a pan, add cheese and your desired toppings, fold it over, and let it cook until the cheese is melted.

Finally, don’t forget about breakfast! Overnight oats are a great option for a quick and easy breakfast that can be made in advance. Simply mix together oats, milk, and your desired toppings like berries or nuts, and let it sit in the fridge overnight. In the morning, you’ll have a delicious and filling breakfast ready to go.

Cooking for one doesn’t have to be a chore or expensive. By using simple and affordable recipes, you can enjoy delicious and nutritious meals that are easy to make and won’t break the bank.
